For every Wednesday morning in the last 10 weeks, I had to pack both snack and lunch boxes for JD. He spends the whole day in kindy every Wednesday and half days on 2 other days. For the first 3-4 weeks, it was always a ham and cheese sandwich for lunch. Then I got bored with it and started packing pasta salad, rice salad as lunch for him.
So last week like every other Wednesday morning, I asked him what he wanted for lunch, and this time he said to me “Mum, I want Chinese today, char siu, rice and some dunplings!”
It was easy, we had some leftover char siu from the night before, I cook some rice in the rice cooker, pan fried some “gow gee” I wrapped up the night before in preparation for next day’s lunch.
Tada, a “Chinese lunch box” he proudly said to his teacher as he walked into the classroom that day….

Yummm! And plus the fruit and cookie, there’s so much to eat! =)
With my older boy, I used to also send him to school with cold sandwich or cold pasta kind of lunch. One day, he asked me the same thing like JD asked you, and it’s been mostly hot packed lunches ever since!
And you may know this, there are more evenings now when I will cook extra portions of the meat and veggie for dinner, just so I can roll them over for packed lunches the next day! And you can’t call them leftovers, if they were portions deliberately set aside… and still just as good the next day!;p Just heat up and go, and for a bit of variation, I sometimes change the carbo (e.g. rice for dinner, but pasta or some other carbo to go with same meat and veg for lunch) to tweak it a little.
